When the water pan boils out the temperature jumps up quickly.
It’s a learning process, but getting very good results.

The only drawback, so far, is that it doesn't retain heat as well as one with heavier walls.

Doesn't keep the heat inside
The product is made with cheap material and the doors have gaps so when you are cooking the heat escapes. The temp wouldn't go over 150 degrees. It's unfortunate because this was an anniversary gift and only figured out it was cheap when making a bunch of food.

works fine but $199 is too expensive, could find very similar quality product for cheaper price. not recommended and will not pay such price to buy smooker like this again.

I got some locking washers to put this together. You should supply those.
This took some time to put together. Locking washers would have been nice. I bought some. The Handles on the side are really touchy when tightening them down. I broke one. I NEED A REPLACEMENT HANDLE FOR THE SIDES.

Cheap material, it started rusting two weeks from purchase! Had to paint with rustoleum.
